Amish Zucchini Casserole
Amish Zucchini Casserole is loaded with fresh zucchini, onions, eggs, and milk bound together with saltine crackers. This easy Amish recipe will indeed become a family favorite and weekly staple. It makes a great breakfast or brunch dish, but can be enjoyed any time of the day. Try adding a layer of cheddar cheese or sausage and bacon bits for a heartier meat-based zucchini casserole.
4 c. zucchini, shredded
4 to 5 eggs, beaten
1 large onion, chopped
3 c. crushed saltine crackers
2 c. milk
salt/pepper to taste
Start by preheating the oven to 350°. Grate zucchini and add salt to draw out extra moisture. Pat dry with a towel, cheesecloth, or drain in a colander.
Combine chopped onions with grated zucchini. Mix well.
In a large mixing bowl, whisk eggs, milk, and salt and pepper.
Combine zucchini and onion with egg and milk mixture. Bake at 350° for 1 hour.
Let cool for 10-15 minutes and serve immediately.
Feel free to add additional vegetables like grated carrot, squash or broccoli.
If adding cheese, add to the casserole around 35-45 minutes into the bake time or upon serving.
For a heartier dish, add cooked sausage, bacon or ground beef to the recipe.
Try playing with different seasonings and herbs for different flavor combinations.
