Amish Orange Tapioca Salad
Amish Orange Tapioca Salad is a simple summer delight with a combination of orange gelatin, vanilla pudding, and tapioca pudding. Amish Orange tapioca is a similar to a rice pudding but with a more fruit gelantious texture. Try with your favorite fresh fruits upon serving.
3 c. water
1 3-ounce orange gelatin
1 3.4-ounce instant vanilla pudding
1 3-ounce tapioca pudding
1 15-ounce can of mandarin oranges, drained
1 8-ounce can of crushed pineapple, drained (optional)
1 8-ounce carton of frozen whipped topping, thawed
In a small saucepan, bring 3 cups of water to a boil. Then add gelatin, vanilla pudding, and tapioca. Bring to a boil again and cook for 1-2 minutes. Remove from heat and let cool (15-30 minutes).
Once fully cooled, transfer to a serving bowl and fold in orange, pineapple (optional), and thawed whipping topping. Combine well and refrigerate for 2-4 hours or overnight.
