Watergate Salad

This week’s recipe comes from Mrs. Herman (Bertha) Gingerich, who brought this dish to the community picnic in the Mast family’s district last week. She mentioned that Watergate Salad has been a favorite at many gatherings over the years because it is easy to prepare and always seems to disappear quickly from the serving table. The children especially enjoy the marshmallows, and the adults appreciate how refreshing it tastes on a warm day. Mrs. Gingerich said she first learned this recipe when she was a young wife helping with church meals, and she has kept the recipe ever since. She still mixes it the same way, with the pudding added dry and everything stirred together until it turns its familiar pale green. It is one of those dishes that feels right at home at any picnic, and she was glad to share it with us for this week’s newsletter.
