Vegetable Soup

This week’s recipe comes from Mrs. LaMar Gingerich. With gardens producing steadily and canning jars filling up, she often turns to recipes that bring together the vegetables gathered from long days in the rows. Her vegetable soup is one she has prepared for many years, especially during busy weeks when the shelves are lined with fresh produce waiting to be used. Mrs. Gingerich first wrote this recipe down after realizing how often she relied on it when her children were young. It was a dependable meal that made good use of whatever had been picked that day, and she appreciated how easily it could be shared with neighbors or tucked into the freezer for later. The combination of vegetables, tomato juice, and a touch of hamburger gives it a hearty flavor that feels familiar to many Amish families. It is the kind of soup that fits naturally into the canning season, when kitchens are full and the harvest is at its peak.
