Pancakes and Syrup
This week’s recipe comes from Mrs. Earnest Schwartz’s kitchen, and it belongs right beside this week’s letter. These are the pancakes of an in-between Sunday: quick to stir up, light enough to come off the griddle puffed full of bubbles, and served with a homemade syrup that takes nothing more than cream and brown sugar. The syrup has one small secret. Once the brown sugar goes into the cream, leave it be, without stirring, until it just starts to boil. Then take it off the heat and stir it smooth.
