Lemon Puff Pudding
This week’s recipe comes from the kitchen of Mrs. Paul Hochstetler, who has shared her dessert recipe so many families can enjoy it during Summer gatherings. Lemon Puff Pudding is one of those dishes that feels light and comforting at the same time, with a bright flavor that makes it a favorite for picnic tables and Sunday meals. Mrs. Hochstetler says it is always well received.

Cream butter, 1/2 cup of sugar and flour in mixing bowl.

Add egg yolks; beat well.

Stir in lemon zest, lemon juice and milk.

In a separate bowl add salt to egg whites and beat until stiff; gradually beat in remaining 1/2 cup sugar.

Fold into first mixture.

Pour into buttered 8 x 8 inch baking dish; set dish in shallow pan containing boiling water 1 inch deep.

Bake at 350°.
