This week’s recipe comes from Mrs. Elmer Yutzy. Her lasagna is one of those meals that fills a table with conversation and brings everyone back for a second helping. It is a favorite among her family because it blends the richness of tomato and beef with the creamy layers she has perfected over the years. Mrs. Yutzy first wrote this recipe down after making it for a Sunday supper when several neighbors stopped in unexpectedly. She wanted something warm and filling that could stretch to feed a crowd, and this dish has been part of her regular rotation ever since. It is simple to prepare, generous in flavor, and exactly the kind of comforting meal many Amish families enjoy during the colder months.

Cook noodles. Drain. A small amount of olive oil may be added to noodles while cooking. Combine cream cheese, cottage cheese, sour cream, onion, and pepper. Brown meat. Drain off grease. Add tomato sauce and tomato paste to the meat. Layer in 9x13-inch pan, alternating noodles, cheeses, tomato sauce, and meat. Repeat layers once. Bake at 400° for 45 minutes. Best if covered during baking until almost done (about 5 minutes).
