Glazed Apple Cookies
This week’s recipe came to us in the happiest way. One of the young men who helps in our shipping barn brought in a container of glazed apple cookies his mother had made, and they were gone before the morning was out. We asked whether he might bring the recipe along the next day, and he did, written out in his mother’s own hand. Kathryn Mast has been making these cookies for years, and with apples coming on strong all over the community right now, she says this is the time of year her kitchen smells best. The cookies are soft and cake-like, with cinnamon and cloves that fill the whole house while they bake, and the chopped apples keep them tender for days. The icing is what makes them what they are, so spread it on while the cookies are still warm from the oven and let it settle into every crack. Kathryn says they travel well and disappear fast, which makes them just right for a Labor Day gathering or for tucking into a lunch pail once the school year is under way.

Mix cookie ingredients in a large bowl.
