Apple Fritters
Mrs. Ezra Yoder shared this Apple Fritters recipe. She mentioned that this is one of the first recipes she reaches for when the apples begin to ripen. Apple fritters have long been a favorite in her kitchen, partly because they come together quickly and partly because they remind her of the treats her mother made when she was young. She still remembers standing on a chair to watch the batter drop into the fryer and waiting for the first fritter to cool enough to taste. She wrote the recipe down for us as she keeps it in her own notebook, with familiar ingredients that make it easy to prepare for a family or a gathering. Mrs. Yoder says these fritters are often served when relatives stop by or when the children ask for something special. Cream butter, sugar and vanilla.

Add eggs and beat until light and fluffy.
