Whoopie Pies

Mrs. Noah Yutzy was especially pleased to share her Whoopie Pie recipe with our readers this week. This is one of the treats she loves to make, and her family and neighbors often ask for them when a special dessert is needed. We also receive many requests from readers for a good Amish Whoopie Pie recipe, so when we thought about who enjoys baking them most, Mrs. Yutzy came to mind right away. She agreed to write it down so others could enjoy the same soft cakes and creamy filling that her family looks forward to. She took care to note each step just as she follows it in her own kitchen, from creaming the lard and sugar to assembling the finished pies with the filling tucked between the cookies. Mrs. Yutzy remembers learning this recipe from an older relative and has kept it as a favorite for gatherings throughout the Summer and into Fall. She hopes that by sharing it, more homes will be filled with the same comforting scent and sweetness that her family enjoys when a fresh batch of Whoopie Pies cools on the counter. Cream lard and sugar. Add well-beaten eggs and vanilla. Sift flour, cocoa, and salt. Add alternately with milk. Dissolve baking soda in hot water and add to mixture. Drop by spoon on cookie sheet. Bake at 350 for 8-10 minutes or until firm.
