Underground Ham Casserole
This week’s recipe comes to us from the kitchen of Mrs. John Wm. Schrock, who has graciously shared one of her family favorites. The Underground Ham Casserole is a hearty dish layered with ham, onions, cheese, and potatoes, finished with a generous topping of bacon. It is the kind of recipe that brings families together around the table, offering both comfort and tradition in every bite. Mrs. Schrock notes that the name “Underground Ham” comes from the way the creamy mushroom and cheese mixture rises up through the potatoes as it bakes. It is a simple yet memorable dish, reflecting the Amish way of turning everyday ingredients into something special. By sharing it, she passes along not just a recipe but a piece of her family’s story, inviting others to enjoy the same warmth and satisfaction that her household has cherished for years.

Combine ham, margarine or butter, onions and Worcestershire sauce; cook until onions are tender. Place in the bottom of a greased 9x13-inch pan. In a saucepan, heat together cream of mushroom soup, milk and cheese until the cheese melts. Place over top of onion and ham mixture. Mash potatoes, using no salt or milk, and mix with sour cream. Spread over top of mixture and sprinkle with bacon. Bake in a 350° oven for 20 minutes. The mushroom soup and cheese mixture comes to the top when done. That's why it's called Underground Ham.
