Ham and Potato Casserole
A hearty Amish ham and potato casserole from Mrs. Herman Gingerich (Bertha), passed around at a community quilting. Made with potatoes, ham, cheese, and a warm creamy sauce. Perfect for feeding a crowd at gatherings, potlucks, or family meals.

Serves a large crowd (about 30-40 servings)

Mix together the last 5 ingredients in large kettle and stir with wire whip to keep from scorching and to keep from being lumpy.

Heat until it starts to boil, then add chunks of cheese until melted.

Add to potatoes and ham.

Mix well and put in roasters.

Bake in 350° oven until it is thoroughly heated and cooked.
This week’s recipe comes to us in a special way. Rosa attended a quilting earlier in the week, and the ladies who gathered there were served a hearty casserole that everyone seemed to enjoy. Before the day was over, a handwritten copy of the recipe was passed around the room so the women could take it home. Rosa brought a copy back to share with all of us, and we are grateful she did.
The recipe was written down by Mrs. Herman Gingerich, known in the community as Bertha. She has prepared this casserole for many gatherings over the years, especially when a large group needs to be fed well without much fuss. It is the kind of dish that fills a kitchen with a comforting aroma and brings people together around the table.
