Autumn Surprise Cake
Mrs. John Henry Yoder sent along this autumn surprise cake, and the name comes honestly. There is no sugar in it at all. The sweetness is all honey, and the coconut is the part that catches people, since nobody expects to find it in an apple cake. She says she has been asked for the recipe more times than she can count, usually by someone standing in her kitchen with a second piece in hand trying to work out what is in it. It is a simple cake to put together, with the apples left unpeeled and everything stirred in one bowl. It bakes up moist and keeps well on the counter for a few days, which makes it a good one to have on hand when company stops in unexpectedly. With apples coming in from every direction right now, she says this is the time of year it gets made most often at her house. It is good plain, and better still with a little cream poured over while it is still warm from the oven.

Mix apples and honey.

In a separate mixing bowl; sift flour, salt, and baking soda together.

Add apples and honey mixture and remaining ingredients and mix thoroughly.

Pour into greased and floured 8-inch square pan and bake at 350° for 40 to 45 minutes.
