    Preheat the oven to 400°. Prepare dumpling batter by first mixing dry ingredients; flour, baking powder, and salt. In a separate bowl, whisk egg and milk. Combine wet and dry mixes to make dumpling batter. Set aside as this will be used to top the casserole.

    In a large skillet, saute onions, carrots, and celery in butter or olive oil until tender.

    In a small bowl, mix 3 tbsp flour with 1/2 cup of chicken broth. This will be used to thicken the sauce with the vegetable.

    Start by adding 1 cup of chicken broth and flour mix to the skillet. Combine well and then add the rest of the broth mixture. Cook on medium heat until the mixture thickens (about 3-5 minutes). Remove the skillet from heat.

    Add chicken, peas, salt, and pepper to the skillet. Combine well.

    Transfer chicken and vegetable mixture to a 9x13in greased casserole pan. Spoon the dumpling mix on top of the casserole (adjust the dumpling size to your preference). Season with salt and pepper.

    Bake casserole for 20-25 minutes at 400 until dumplings are golden brown. Let the casserole rest for 10 minutes before serving.
