Preheat oven to 375°. In one large mixing bowl, cream sugar, and shortening. Then beat in eggs.

In one bowl, add vanilla to buttermilk. Add the buttermilk mixture to the sugar mixture. Slowly add flour, baking soda, and salt mixture. Let the dough chill in the refrigerator for at least 30 minutes.

Place cookies on a lined baking tray at least 2 inches apart. Bake at 375° for 10- 15 minutes until edges are lightly browned.

Let cookies cool on a cooling rack. If the cookie dough sticks together, use a cookie cut out to make round circles.

For caramel icing: Add milk and bring it to a boil. Let cool and add powdered sugar. Let the icing cool then frost with cookies.
